Rancho Grande was first introduced to us by our good friend Nas during a cupping session with Falcon Coffee. Rather than following the more traditional natural or pulped natural approach commonly associated with Brazil coffees Jose Carlos processed this lot using natural anaerobic fermentation. Fully ripe cherries are placed inside sealed tanks with minimal oxygen exposure before undergoing slow patio drying. The additional precision throughout fermentation introduces another layer of complexity into the cup making the experience of drinking Brazil coffee feel far more dynamic and expressive.\u003c\/p\u003e\n\u003cp\u003eExperimental processing is slowly finding its place among Brazilian producers. Considering Brazil’s position as the world’s largest coffee exporter traditional profiles still dominate global demand. Yet coffees such as this continue pushing the conversation forward proving that innovation and large scale production do not necessarily sit on opposite ends of the spectrum. Rancho Chameleon reflects this shift beautifully. Familiar at first glance yet carrying a profile with far more depth and texture than expected from a classic Brazil offering.\u003c\/p\u003e\n\u003cp\u003eThrough filter brewing the coffee delivers a deeply comforting cup experience. Gentle citrus qualities reminiscent of stone fruits move seamlessly alongside mellow melon sweetness creating a profile that feels soft approachable and easy to return to daily. As the coffee cools delicate pear notes begin to emerge followed by a vibrant nectarine like finish that lingers elegantly across the palate. There is something quietly reassuring about this coffee.
