It is a privilege to work with exceptional raw materials produced by talented young producers like Nestor Lasso. His El Diviso farm has set a new benchmark in specialty coffee, demonstrating that there are no limits to what can be achieved at the farm level. Nestor’s innovative approach has opened the eyes of industry professionals, encouraging them to look at coffee beyond the traditional seed-to-cup narrative.

El Diviso is a true coffee garden, rich with exotic varieties. Nestor takes full advantage of these, growing multi exotic coffee varietal such as Java, Sdira, Bourbon Aji, Geisha etc. unlocking Colombia potential as coffee origin. This new release featuring Bourbon Aji varietal which is a rare mutation Bourbon varietal found in Colombia. Named for its chili-like cherry shape, it offers vibrant, fruit-forward flavors. Though not disease-resistant, it produces a bright, expressive cup when grown with care. A unique varietal with clarity and depth.

Nestor implement complex anaerobic processing method enhancing its quality through progressive and intricate processing methods. This particular washed-process coffee undergoes a unique combination of 40 hours of natural anaerobic fermentation, followed by 20 hours of natural aerobic fermentation. The cherries are then pulped and went under 20 hours of semi-submerged fermentation, finishing with a thermal shock in warm, 60°C water to halt further fermentation. 

Bourbon Aji become a phenomenam when Mikael Jasin won 2024 World Barista Championship in his competition routine. Known for high sweetness and elegance spice taste profile, bourbon aji provide different coffee experience inviting to us to enjoy clean, structured cup with bright acidity and refined sweetness. The filter coffee give well balance cup with reminiscent of apple juice and white grape in its clarity, with peach sweetness, soft floral notes of white rose, and a finish like rose milk candy. Such a clean, gentle, and quietly expressive filter coffee .

Serving this coffee espresso espress it full potential. We picked up precise, vivid, and quietly fragrant coffee quality. The espresso deliver grape complexity meets the bright tension of calamansi, softened by white fruits and sugar syrup sweetness. A gentle lift of osmanthus carries into a lingering floral aftertaste. With milk, Bourbon Aji turns soft and aromatic osmanthus flower and almond notes weave through a creamy base, while star anise adds a gentle touch of spice sensation. Notes of lychee and lemon meringue bring brightness and lift the tasting make the coffee taste delicate and composed.

The Producer

This exceptional coffee is produced by 24-year-old Nestor Lasso at El Diviso farm, located at an elevation of 1,700 to 1,850 meters. Spanning 18 hectares, the farm is home to 15 hectares of coffee plantations and 2 hectares of forest. Nestor’s farm boasts an impressive selection of coffee cultivars, including Caturra, Colombia, Castillo, Tabi, Pink Bourbon, Red Bourbon, Yellow Bourbon, Bourbon Ají, Caturra Chiroso, Geisha, Sidra, Java, and Pacamara. Nestor employs a variety of processing methods, such as fully washed, semi-washed, and natural, utilizing parabolic dryers, raised African beds, and mechanical dryers for optimal results.

A third-generation coffee grower, Nestor reflects on the farm's origins: "Our grandfather, José Uribe, founded El Diviso. Through family teamwork and careful savings, we developed the infrastructure to process specialty coffees, continually striving to improve both our coffee and our lives. Years of experimentation allowed us to refine our processes, boosting our income and enabling the planting of new, higher-quality varieties. One of our dreams is to share our specialty coffee with the world."

With 80,000 trees, the farm is a testament to the Lasso family’s dedication and passion for producing high-quality, sustainable coffee.
