There is nothing exciting about talking about fermentation when it comes to the specialty coffee world. El Guayabo, owned by Maria Gaviria, always seeks to improve and challenge the status quo in coffee processing. Our latest coffee selection comes from an exotic varietal pink bourbon lot with 400 hours of natural anaerobic fermentation. Unlike traditional natural anaerobic fermentation, Maria meticulously takes care of each processing stage to ensure she delivers the best result.

Pink Bourbon is a coffee varietal that comes from a natural mutation of red Bourbon that has an orange and yellowish cherry colour. The outer appearance, like a pink colour, gives this coffee distinct looks and also has a unique taste flavour. Like red bourbon, pink bourbon also has a high sweetness attribute but a much brighter acidity quality that delivers a bright and sparkling taste like grapefruit or pink guava.

With 400 hours of natural anaerobic fermentation, Maria’s Pink Bourbon produces such a deep roselle and dark cherry flavour. It is a complex cup with a moderate winey sensation, sweet grape, sparkling cherry, and hints of rum taste. The aftertaste drastically improves at much lower temperatures, with a juicy and lingering aftertaste.

The Producer

Working closely with our partner Colombia Coffee Hunter in Colombia, we are sourcing the finest coffee from Colombian smallholder farmers. We are focusing on small producers who have the passion to produce specialty coffee and need a platform to showcase their work. El Guayabo from Quindio, owned by Maria Gavirio, is a beautiful example of how the specialty coffee community appreciates coffee producers.

Located in sharp terrain, accessibility to her farm is challenging. Yet the strategic location is an advantage to grow exotic varietal Pink Bourbon, which is considered on par with Geisha or Sidra coffee. Maria chose a natural anaerobic process to create a unique taste profile and also showcase her capabilities as a specialty coffee producer.
