I still remember tasting Tabi coffee varietal when I had cupping session at Aitch Coffee Roaster conducted by Nordic Approach. Being a coffee lover new coffee varietal always catch my attention. Lots of new varietal like Parainema, IH-90 and Tabi was developed to help coffee farmer to produce sustainable coffee production which has more resistance to climate change challenge, drought season and insect attack.
Tabi was introduced in 2002 by CENICAFE. It is a variety obtained by crossing Typica, Bourbon and Catimor varietal. This particular coffee has gone through lactic process which using lactic acid bacteria under anaerobic conditions with constant measurement of oxygen level, sugar content, and pH to create unique flavors.
