Located on the eastern edge of Indonesia, Flores remains largely untouched by urbanisation, providing an ideal environment for cultivating Arabica coffee. The unique natural surroundings and climate make it a perfect place for coffee that offers distinctive flavours.

Tuang Coffee has been a pioneering force in unlocking the potential of Flores coffee. Fuelled by a group of passionate young individuals, Tuang Coffee has introduced experimental processes, such as anaerobic fermentation, which had never been attempted in Flores before. By carefully sorting cherries and ensuring that only the ripest are processed, they’ve significantly improved the quality of their coffee.

Our latest gem from Tuang Flores Gulang Lot 488 is a one of a kind Indonesian anaerobic coffee like no other we've ever experienced. Crafted through a meticulous 144-hour natural anaerobic process, it unveils a pristine fermentation flavour that shines in both filter and espresso preparations. In the filter brew, a red floral aroma reminiscent of roselle melds with intricate notes of berries and grape, while subtle hints of dried mango and dark cherry lend a delicate sweetness. The espresso, however, reveals a richer tapestry of flavours with layers of mango, plum, cherry cola, blackberries, red wine, and a bittersweet chocolate finish. When combined with milk, its vibrant red berry character is perfectly balanced by milk chocolate creaminess. This coffee is an exceptional find from Flores stands as one of the finest microlot coffee we’ve ever sourced.

This partnership allows farmers to elevate their coffee, which was once viewed as a simple, bitter product, into a refined, specialty offering. The coffee trees are organically grown at altitudes between 1,400–1,700 meters above sea level, surrounded by other crops such as taro, yam, and banana trees. Each coffee bean is carefully processed, with attention to its varietal, method, and the specific village of origin, ensuring that every batch is uniquely traceable. Through continued experimentation with fermentation processes, Tuang Coffee strives to refine its flavors, offering only the finest beans from Flores Manggarai.
