Before starting the fermentation process, the coffee cherries are thinly layered to a thickness of about 5 cm and dried on the patio for 2 days. This process minimises the risk of fungi and proceeds until the microbes have an appropriate level of moisture to activate, which at the same time changes the structure of cherry sugars, allowing coffee cherries to remain in good condition for a long time. Afterwards, the cherries go through a 95-hour anaerobic fermentation process in an oxygen-blocked plastic bag, and the fermented coffee is moved back to the patio and slowly dried for about 15 days.

Inspired by the Vecinos de LA Palma and El Tucan coffee models in Colombia, CCD has established cooperative relationships with coffee producers in Hornito, Renacimiento, and Boquete. By controlling every step of the process, they are willing to push the limits and create exceptional profiles that span the spectrum of flavours, resulting in something impressive and unique to Panamanian coffees. The farms they work which are located in an altitude range between 1,300 and 1,800 metres above sea level.
