Nutty Grande
Brazil has always remained a staple within Arkib’s rotation and sourcing through Falcon Coffees continues to uncover coffees that challenge the familiar perception of the origin. Rancho Grande was first introduced to us by our good friend Nas during a cupping session with Falcon Coffee. Rather than following the more traditional natural or pulped natural approach commonly associated with Brazil coffees Jose Carlos processed this lot using natural anaerobic fermentation. Fully ripe cherries are placed inside sealed tanks with minimal oxygen exposure before undergoing slow patio drying. The additional precision throughout fermentation introduces another layer of complexity into the cup making the experience of drinking Brazil coffee feel far more dynamic and expressive.
Experimental processing is slowly finding its place among Brazilian producers. Considering Brazil’s position as the world’s largest coffee exporter traditional profiles still dominate global demand. Yet coffees such as this continue pushing the conversation forward proving that innovation and large scale production do not necessarily sit on opposite ends of the spectrum. Rancho Chameleon reflects this shift beautifully. Familiar at first glance yet carrying a profile with far more depth and texture than expected from a classic Brazil offering.
The natural anaerobic process surprisingly highlights the flavour clarity often hidden beneath the heavy body commonly associated with Brazil coffee. As espresso the cup opens with soft malic acidity reminiscent of fresh apple alongside deep caramel sweetness and subtle melon undertones that add further dimension to the profile. With milk the coffee transforms into darker flavours of walnut and rich chocolate becoming noticeably creamier as the temperature cools. Sweet honeydew notes slowly begin to emerge before finishing with lingering cocoa powder character. Rancho Chameleon feels distinct from the familiar image of commercial Brazil coffee. Comforting yet confident enough to stand entirely on its own.

The Producer
Founded in 1933, Rancho Grande Farm began when Mr. Aneite Reis inherited five hectares of land and established the family’s coffee-growing legacy. Today, the farm is managed by José Carlos Reis and his son, Flávio Reis, carrying forward three generations of dedication to coffee production with a shared focus on quality and long-term sustainability.
The farm is committed to producing outstanding coffee while maintaining strong environmental responsibility and prioritising the well-being of its workers. Several employees live on-site in housing supported with subsidised electricity and food, reflecting the family’s belief that sustainable coffee production begins with a well-cared-for community.
Driven by innovation and continuous improvement, Rancho Grande has invested in modern processing techniques, including static drying boxes that allow for greater control over drying and flavour development. With a clear focus on the specialty coffee market, the farm continues to refine every stage of production.
