The coffee is processed using the traditional static box natural method, a technique that highlights the full potential of the beans. Only cherries harvested at peak ripeness are selected, ensuring maximum sweetness and flavour development. After harvest, the cherries are spread carefully fermented in concrete tank to develop much gentle taste profile. The coffee finally dried across patios, where they dry slowly under the sun. This gentle drying process helps to concentrate the sugars and preserve the complex aromas, resulting in a coffee with vibrant fruit notes, a rich body, and a distinctive taste that truly embodies the spirit of South of Minas.
