La Palmer’s is one of the latest additions to our coffee line-up, sourced through our trusted partners at Siruma Coffee. Ignacio Rodriguez continues to push boundaries in processing, and his work on the Astro lot is a reflection of that precision. By refining a short anaerobic fermentation lasting between 26 to 30 hours followed by a carefully controlled drying phase of 140 to 150 hours at temperatures below 28°C, Ignacio achieves remarkable consistency across batches. The result is a cup driven by a clean, strawberry-forward profile, where aroma and flavour align seamlessly. Astro is a clear example of what thoughtful fermentation and measured technique can unlock.

At a medium roast, the Astro lot expresses its natural anaerobic character with clarity—crafted for espresso. It opens with a vibrant strawberry candy sweetness, layered with juicy pineapple and the soft, rounded notes of watermelon rind. The finish lingers like ripe honeydew, offering a clean, melon like sweetness. Even with milk, the fruit character holds its ground flavours of cherry pod, honeydew, and bubblegum emerge, evoking a playful, fruit candy profile. Astro lot captures what we love most in specialty coffee, a cup full of vivid and diverse fruit sensations.

Over the years, through unwavering dedication, he steadily grew the estate to 165 hectares land that Ignacio now stewards with the same commitment, focusing fully on producing high-quality, traceable coffees.
