In early 2020 Buku Sayisa is one of the coffee that mostly conversed around specialty coffee lover. Unlike common Ethiopia coffee, Buku Sayisa nailed the description of specialty coffee, high flavour clarity and well balance flavour. This year we are happy to source this coffee again through our partner at Falcon Coffee. The quality has been consistent and we rejoice the excitement buying a clean, well balance and harmony flavour Ethiopian coffee.Ethiopia blessed with clean stream river that has been pivotal to rural area. For Buku Sayisa, this washed process enlighten the flavour clarity and quality consistenty. We took approach with medium roast to balance out the acidity and body while creating much rounder and good finishing espresso coffee.

This coffee offers a striking contrast between its espresso and milk-based expressions. As an espresso, it delivers a vibrant and zesty experience, with a bold calamansi-like acidity that brightens the cup. The sweetness is layered, reminiscent of fruity candy and gummy berries, balanced by a tart green mango finish that adds depth and intrigue.When paired with milk, the coffee transforms into a rich and velvety treat. The citrusy brightness mellows, giving way to notes of honey and creamy milk chocolate. Dark chocolate and cacao nibs emerge in the aftertaste, adding a deep, bittersweet complexity. This dynamic roasting profile makes it a compelling choice for both black and white coffee.

The Producer

Buku Sayisa Washing Station, located in the highlands of Guji, Ethiopia, sits at an elevation of 2,100–2,350 meters above sea level, fostering ideal conditions for growing high-density, complex-flavored coffee. Named after the Amharic phrase meaning "blessed valley," the station sources cherries from around 450 smallholder farmers cultivating indigenous Ethiopian Arabica varieties.

Both washed and natural processing methods are used. In the washed process, cherries undergo pulping, followed by underwater fermentation for 36–72 hours before drying on raised beds for 7–10 days. The natural process involves drying whole cherries on raised beds for 12–15 days, ensuring controlled fermentation for a refined profile.

Buku Sayisa’s coffees are prized for their expressive and vibrant flavors, often showcasing notes of peach, floral undertones like jasmine and lavender, and a honeyed sweetness. The combination of high-altitude terroir, meticulous processing, and exceptional coffee genetics makes Buku Sayisa a standout in the specialty coffee world.
