Shakisso is a land that continues to shape the legacy of Ethiopian coffee, a highland region where altitude, shade, and patience come together in quiet harmony. The farms here rest beneath canopies of native trees, allowing the cherries to mature slowly and gather sweetness that unfolds gently in the cup. From this landscape, we welcome the work of Ismael Hassen Aredo, a dedicated farmer whose Kayon Mountain mill captures the balance of nature and craft. His coffee reflects the calm precision of Shakisso itself , sweet, layered, and deeply rooted in the spirit of the highlands.

Kayon Mountain blesses farmers like Ismael with coffees rich in complexity, often marked by deep berry tones and elegant sweetness. Through Falcon’s dedicated effort, Ismael’s lot was carefully separated from regional blends, allowing his work to stand on its own and reveal the distinct character of his farm. This pursuit of individuality gives small roasters like Arkib the chance to explore the vast potential of Ethiopia’s single farmer coffees, expressions that speak of place, patience, and the quiet mastery behind every harvest.

Ismael Coffee awakens a familiar memory of the classic Shakisso cup, aromatic, bright, and deeply refreshing. The first espresso sip carries gentle citrus notes intertwined with soft melon sweetness, a balance that feels both lively and serene. As espresso, the cup unfolds with clarity, revealing the warmth of mango and pineapple alongside a floral touch of magnolia. The finish lingers like the last bite of crème caramel, smooth and comforting. With milk, the sweetness turns playful, reminiscent of honeystar cereal with a distinct mango charm. Kayon Mountain remains close to our hearts, and this season, Ismael Coffee carries that same affection, a reminder of why we fall in love with Ethiopian coffee, again and again.

The Producer

Kayon Mountain Coffee was founded in 2012 by Ismael Hassen Aredo and his family in the Guji Zone of Ethiopia. It stands as one of the few vertically integrated, family-owned estates in a landscape where coffee is often produced through fragmented smallholder systems. Spanning around 500 hectares, with 300 dedicated to coffee and the rest preserved as forest, the farm was built on a vision to combine quality production with environmental care and social responsibility. The team cultivates certified organic and biodynamic coffee under natural shade, using composting methods and maintaining biodiversity to protect the surrounding ecosystem.

The heart of Kayon Mountain lies not only in its cultivation but also in its commitment to people. The farm provides fair wages, healthcare, transportation, and proper living facilities for more than 300 seasonal and 25 full-time workers. In a region where mining is often the main source of income, Kayon Mountain stands as a meaningful alternative, offering stable employment and growth opportunities within coffee. This approach has helped strengthen community ties while proving that ethical and sustainable practices can coexist with exceptional quality.

With its own wet and dry mills, Kayon Mountain maintains complete traceability of its coffee from harvest to export. The farm sits between 1,900 and 2,200 meters above sea level, producing both natural and washed coffees with great precision. This full control over production allows the farm to bypass the Ethiopian Commodity Exchange and sell directly to international specialty buyers. The result is a coffee that embodies integrity from soil to cup , a model of sustainability deeply rooted in Guji’s highlands yet driven by a clear global ambition.
