Indonesia’s coffee, grown across its vast archipelago, offers a rich and diverse range of flavour profiles. One region that stands out is East Nusa Tenggara, particularly the island of Flores. Located on the eastern edge of Indonesia, Flores remains largely untouched by urbanisation, providing an ideal environment for cultivating Arabica coffee. The unique natural surroundings and climate make it a perfect place for coffee that offers distinctive flavours.

Tuang Coffee has been a pioneering force in unlocking the potential of Flores coffee. Fuelled by a group of passionate young individuals, Tuang Coffee has introduced experimental processes, such as anaerobic fermentation, which had never been attempted in Flores before. By carefully sorting cherries and ensuring that only the ripest are processed, they’ve significantly improved the quality of their coffee.

Our latest offering from Flores, Tuang Coffee’s Nati 773 lot, showcases a carefully executed 120-hour natural anaerobic fermentation in sealed barrels. The result is a complex and layered cup, highlighting winey fruit character reminiscent of strawberry candy, grape and dried longan, wrapped in a silky sweetness like melon. A playful note of popsicle adds delicacy of candy to the mouthfeel, while soft touch fermentation create pointed, harmony and layered cup profile. This coffee is a celebration of Tuang Coffee’s dedication to precision and craftsmanship an experience that rewards slow, attentive sipping.

Nati village is home to one of our favourite lots from Flores showcasing a flavour structure that gently echoes Ethiopian profiles. It opens with natural berries sweetness and tropical undertones. As filter, the cup reveals notes of strawberry candy, fruity grape, delicate melon, and finishes with a soft dried longan aftertaste. Nati carries a fine balance between ripe fruitiness and tropical sweetness, offering a refined impression of well-processed Indonesian coffee.
