Indonesia’s coffee, grown across its vast archipelago, offers a rich and diverse range of flavour profiles. One region that stands out is East Nusa Tenggara, particularly the island of Flores. Located on the eastern edge of Indonesia, Flores remains largely untouched by urbanisation, providing an ideal environment for cultivating Arabica coffee. The unique natural surroundings and climate make it a perfect place for coffee that offers distinctive flavours.

Tuang Coffee has been a pioneering force in unlocking the potential of Flores coffee. Fuelled by a group of passionate young individuals, Tuang Coffee has introduced experimental processes, such as anaerobic fermentation, which had never been attempted in Flores before. By carefully sorting cherries and ensuring that only the ripest are processed, they’ve significantly improved the quality of their coffee.

Our latest offering from Flores, Tuang Coffee’s Subu 773 lot, showcases a carefully executed 158-hour natural anaerobic fermentation in sealed barrels. The result is a complex and layered cup, highlighting winey fruit character reminiscent of umeboshi and blackcurrant, wrapped in a syrupy sweetness like black cherry. A playful note of winey bubblegum adds delicacy to the mouthfeel, while the lively acidity gives a vibrant structure to the cup. This coffee is a celebration of Tuang Coffee’s dedication to precision and craftsmanship an experience that rewards slow, attentive sipping.

Tuang Coffee's journey begins in the fertile Manggarai region of Flores, Indonesia, where it partners with local farmers to create exceptional coffee. This partnership allows farmers to elevate their coffee, which was once viewed as a simple, better product, into a refined, specialty offering. By working together, Tuang Coffee helps farmers unlock the hidden potential within every coffee cherry.

The coffee trees are organically grown at altitudes between 1,400–1,700 meters above sea level, surrounded by other crops such as taro, yam, and banana trees. Each coffee bean is carefully processed, with attention to its varietal, method, and the specific village of origin, ensuring that every batch is uniquely traceable. Through continued experimentation with fermentation processes, Tuang Coffee strives to refine its flavours, offering only the finest beans from Flores Manggarai. Every step is focused on sustainability, improving farmer’s livelihoods, and embracing the endless possibilities within the world of coffee.
