Lush Forest

East Java has quietly emerged as one of Indonesia’s hidden gems. Since our initial visit in 2020, we have maintained a steadfast commitment to sourcing from this remarkable region, particularly from the Ijen area. Here, the unique geography marked by lush forests, thriving wildlife, and a refreshing, cool climate creates an extraordinary environment for coffee cultivation. The coffee growing lands, framed by the Ijen Plateau and spanning a diverse range of elevations, produce some of the most varied and intriguing flavour profiles we have ever experienced.

Our latest release, Ijen Metahai exemplifies the clarity and finesse of washed Indonesian coffee. With extended 144-hour anaerobic washed process, this coffee develops a complex citrus character complemented by a delicate floral aroma. Its flavour profile is dominated by a refined white flower note, enhanced by the sweetness of white fruits. We picked flavour notes of bright and juicy vibrancy of muscat, crisp allure of white grape and subtle aroma of coffee blossom. The complex taste profile is further enriched by the rounded sweetness of palm sugar, culminating in a gentle finish of pear. Enjoying a filter brew of Ijen Metahai Mafaka offers a truly rewarding coffee sensory journey.

The Producer

Bondowoso, a regency in East Java, Indonesia, rightfully bears the title "Republic of Coffee" in recognition of its long-established coffee-growing tradition. Located near the Ijen Volcanic Crater, the region’s plantations flourish at altitudes between 1,100 and 1,200 meters, where Arabica varietals such as USDA 762, Lini S795, S288, and Cobra are carefully nurtured. The annual harvest, which spans from June to August, typically culminates in beans that are fully matured by the year’s end.

In the foothills of Mount Ijen, smallholder farmers have embraced coffee cultivation as a vital supplementary livelihood. Following independence, the government allotted many of these farmers half-acre plots for agricultural use, a legacy that saw some diversify into vegetable and tobacco production while others committed their lands to coffee.

Cultivated beneath the protective canopy of shade trees, these coffee plants benefit from conditions that favour a slow cherry maturation, thereby yielding a naturally sweet taste. Many of the farmers process their harvests in modest, small batches or directly sell the cherries to coffee processors, creating a dynamic industry capable of producing both large-scale commercial volumes and distinguished micro lots for the specialty coffee market.
