Protokol 2025

Every year Arkib keeps moving in search of new producers who place equal weight on sustainability and cup quality. That journey led us to Pandansari Coffee a young producer nearing their fifth year yet already showing clarity and intent beyond their age. What drew us in was their deep fascination with coffee processing a hands on curiosity that continues to shape their coffees with confidence and care.

This year we secured two lots from Pandansari. The first is a special microlot of a single Kartika varietal while the second is an Arkib Protokol lot built from a thoughtful mix of varietals. Protokol is a close collaboration with the producer where we design a specific lot guided by our own processing framework. This round explores a balance between anoxic and aerobic fermentation to build depth while preserving clarity.

Cherries are carefully picked and sorted before moving straight into the fermentation tank. They undergo 200 hours of anoxic fermentation submerged in water followed by a brief 12 hour aerobic phase. The cool fermentation temperature paired with short oxidation encourages a sweet grape driven profile. Drying is completed slowly on raised beds to lock in structure and balance.

We call this lot Buja Protokol and it reflects our love for deep sweetness layered with complexity. On filter it opens with velvet tamarind blackberries and sultana raisin. As espresso tangy calamansi becomes more pronounced. With milk the coffee truly settles showing dark berries chocolate muscovado sugar and hints of dragon fruit. Buja marks the beginning of a relationship that we believe will continue to push Pandansari Coffee forward in the years to come.

The Producer

Central Java is often overlooked on the Indonesian coffee map, yet it has quietly stayed on our sourcing radar over the past few years. Beyond Selosa Coffee, another remarkable discovery led us to the slopes of Gunung Slamet and to Pandansari Coffee, a small operation guided by a young farmer named Agung. The farm sits in Desa Kalikidang at 1,500 to 1,650 metres above sea level, where nearly the entire plantation is dedicated to Arabica, with only a small portion reserved for Robusta.

Pandansari began from an unexpected place. Coffee trees were first planted simply to stabilise the land around Agung’s vegetable farm, a natural barrier against landslides. What started as a practical solution soon revealed its potential, as the Arabica thrived in the surrounding terrain. Together with his siblings, Agung began processing coffee on a small scale, starting with honey processing, a classic method passed down by their grandmother. Cherries are pulped and dried with their sticky, sugar-rich mucilage intact, giving the coffee its gentle sweetness and soft structure.

Over time, Pandansari expanded with purpose, introducing more disease-resistant varietals such as Sigararutang, Kartika, Lini and Tim-Tim to secure long-term quality and sustainability. With healthier yields, their curiosity naturally grew, leading them to explore more complex processes like anaerobic and mosto fermentations. This spirit of experimentation places Pandansari firmly among a new generation of Indonesian producers, driven by progress and precision.
