The Tonkongan

Toraja stands as a hidden gem in Indonesia’s coffee landscape, renowned for producing some of the country’s finest beans. Since our visit in 2018, Toraja has held a special place in our hearts, offering coffees that are clean, fruity, and full-bodied. Among the standout regions is Sapan, located in North Toraja Regency. During our journey, we had the privilege of collaborating with Kelana St. Coffee, a passionate local producer and roaster dedicated to showcasing the best of Toraja’s coffee heritage.

Sapan is an underrated region with a unique coffee character, known for its vibrant citrus acidity and bold body. The specific lot we feature was curated by Kelana St. Coffee in partnership with local smallholder farmers. It undergoes a semi-washed, dry hulled process a method well suited to the rural environment. This approach shortens the processing time to just 1–2 weeks, compared to the longer periods required for traditional fully washed or natural processes. The faster turnaround not only preserves coffee quality but also supports sustainable practices by maintaining a steady supply chain between green coffee buyers and local producers.

Toraja Sapan Ta’di coffee offers a delightful sensory experience with vibrant notes of honeysuckle, bringing a floral sweetness to the cup. The flavour is elevated by the refreshing juiciness of honeydew and the tropical allure of guava, creating a bright and fruity character. Rounded off with a subtle hint of milk powder, the cup has a creamy, smooth finish that balances its complexity beautifully.

The Producer

The Torajan tribe, nestled in the central highlands of South Sulawesi, continues to preserve a rich cultural heritage, living in traditional villages where their distinctive boat-shaped houses reflect their deep connection to history. This region's geography is a marvel, humid rice paddies stretch across the lowlands, bordered by dramatic thousand-foot cliffs that rise steeply and are often veiled in a constant mist. Coffee thrives here in one of Indonesia's most unique environments, grown at remarkable elevations reaching up to 2,000 meters above sea level (MASL), some of the highest coffee farms in the country.

Most Torajan coffee farmers work on small plots averaging less than 3 acres. Recently, these producers have begun organizing to establish community micro-mills, transforming how coffee is processed in the region. At these facilities, farmers meticulously sort their coffee cherries before depulping them, fermenting overnight, and washing them. The beans are then spread out on patios to partially dry. However, what sets Torajan coffee apart is the use of a special method called Giling Basah, or wet hulling. This process removes the parchment layer while the coffee still retains a high moisture content, leaving the exposed beans to dry further until they reach export-ready levels. This approach not only creates the beans' unique bluish tint but also contributes to the bold, earthy flavors that define Indonesian coffee, making it a standout on the global stage
