Located on the eastern edge of Indonesia, Flores remains largely untouched by urbanization, providing an ideal environment for cultivating Arabica coffee. The unique natural surroundings and climate make it a perfect place for coffee that offers distinctive flavors.

Tuang Coffee has been a pioneering force in unlocking the potential of Flores coffee. Fuelled by a group of passionate young individuals, Tuang Coffee has introduced experimental processes, such as anaerobic fermentation, which had never been attempted in Flores before. By carefully sorting cherries and ensuring that only the ripest are processed, they’ve significantly improved the quality of their coffee.

The latest offering from Flores, Tuang Coffee’s Subu 867 lot, is a standout. This coffee undergoes a natural anaerobic fermentation for 120 hours in sealed barrels, resulting in a refreshing, soda-like sensation reminiscent of Calpis soda. The flavour profile is further enhanced by a tartness akin to salted Japanese plums, and a soft, cotton candy-like texture that makes it smooth and easy to drink. The winey, fruity notes of yogurt and strawberry give it a uniquely tart, yet pleasant taste, making this batch one of the most exceptional Flores coffees Tuang Coffee has ever produced.

This partnership allows farmers to elevate their coffee, which was once viewed as a simple, bitter product, into a refined, specialty offering. The coffee trees are organically grown at altitudes between 1,400–1,700 meters above sea level, surrounded by other crops such as taro, yam, and banana trees. Each coffee bean is carefully processed, with attention to its varietal, method, and the specific village of origin, ensuring that every batch is uniquely traceable. Through continued experimentation with fermentation processes, Tuang Coffee strives to refine its flavors, offering only the finest beans from Flores Manggarai.
