Peru has long been one of the origins we hoped to bring into Arkib's collection. Often recognised as a supporting origin beside Colombia or Guatemala in blend compositions, Peru is now emerging as a producer of distinctive single origin coffees. Our latest release from Edilberto Torres reflects this evolution and highlights the growing potential of specialty coffee from the region.

Natural processing remains relatively uncommon in Peru. Cherries are hand selected at peak ripeness before flotation sorting removes lower quality fruit. The coffee is then dried under warm weather for two to four weeks before entering a resting period. The approach is simple yet deliberate and allows the coffee to develop greater depth while maintaining clarity in the cup.

This lot offers a different expression from the Peru coffees we have encountered before. Instead of the familiar citrus driven profile it presents greater structure and depth. A slightly more developed roast allows the natural process to unfold with composure bringing together sweetness texture and aromatics in a seamless cup. As espresso it opens with sweet creamy watermelon and delicate dried flower aromatics while maintaining a rounded expressive fruit character. With milk the profile shifts into macadamia and white chocolate supported by a lingering chrysanthemum like floral note that carries through the finish. It is a refined and distinctive interpretation of natural process Peru coffee that highlights the evolving work of producers like Edilberto Torres.

The Producer

Edilberto Torres Sánchez is a second-generation coffee producer from San Antonio Huabal Cajamarca Peru. At 1600 meters above sea level he cultivates Catuai and Bourbon. His focus on natural processing has developed over the past three to four years. Ripe cherries are carefully hand selected then dried on raised beds for 25 to 30 days. The coffee is regularly turned and protected during rain or at night to preserve clarity and structure in the cup.

Huabal in the Jaén province is one of our most important sourcing regions for both farmer engagement and cup quality. The area has strong potential yet limited infrastructure which affects access to technical support and resources. Its mountainous landscape creates multiple microclimates and soil variations. Some zones are humid with red iron rich soils while others are dry and warm. This diversity produces coffees with layered and often complex profiles that reflect the land.

Falcon Coffees began work in Peru in 2019 focusing on direct relationships with producers in the north. The model started with quality differentiated pricing at farm level and later expanded in 2022 through cooperative export channels. Today operations include warehouses in Jaén and Moyobamba with more than 20 staff working with over 500 farmers and eight cooperatives. Sustainability programs provide training agronomy support and long term purchase commitments. Initiatives such as Falcon Specialty Plus with responsAbility and the Soil Health Initiative improve cup scores soil health and farmer income while strengthening traceability and quality control across the supply chain
