Epitome

Sudan Rume is one of the significant coffee varietal that making impact on specialty coffee industry. Popularized by Sasa Sectic World Barista Champion 2015 Sudan Rume gained recognization by coffee profesional and coffee due to unique quality of very fragrance, sweet spice and abundance of floral notes. It is an exceptionally rare cultivar with a beautiful flavour profile.

The Sudan Rume varietal originates from modern day South Sudan, in what is now the Boma National Park. The park lies just across the border from Ethiopia, inside the small area where Arabica coffee still grows completely wild . Sudan Rume, or RS-510 as it is officially designated, is indeed an heirloom or ‘wild’ varietal, mainly used as a stock of high quality genes for new hybrid varietals.

Omar planted a plot of land with Sudan Rume and took care of the farm with organic farming practices. This particular lot went through a 72-hour honey anaerobic process to bring out the unique flavour of Sudan um. The drying took place on a raised bed for around 1-2 weeks until it reached a stable moisture level.

The Producer

Finca San Luis is an exceptional coffee farm from Libano, Tolima, that we know practices organic farming to produce Geisha coffee. Located near the Ecuadorian border and at high altitude, Finca San has an ideal microclimate and fertile soil for growing high-quality coffee.

Beside growing the finest coffee, Omar has a high sense of responsibility and respect for the environment. Therefore, he chose to implement organic farming practices, mainly using his pulped cherries and animal waste as organic fertilizer. This does not come without a challenge since organic farming reduces harvest yields by up to 60%. One way to overcome this is by opening more coffee farms to achieve the harvest yield target.

Now, Omar enjoys sustainable and economic coffee growing since his production costs have significantly dropped and he can preserve local nature while growing good coffee.
